Barbeque Chicken

I love this dish!  I made it several years ago, forgot about it, and revisited it last week.  It's so easy, but if you're like me, I just have to be reminded sometimes!!  So I referenced my trusty red and white Better Homes & Gardens cookbook, simplified it a little bit, and voila!  Winner, winner, chicken dinner!!  All you need is:
  • bottle of your choice of barbeque sauce
  • boneless, skinless chicken (I used the tenders this week)
  • olive oil (or vegetable oil if you prefer)
  • cooking spray

I sprayed my 9x13 baking dish with cooking spray

Then I browned my chicken on both sides in about 2 tbs olive oil.  You may need more if it burns off quickly.  I also seasoned my chicken with my two faves...

I know y'all are shocked, but NO garlic powder!!  I don't know what was wrong with me - ha!  

After browning the chicken, I put it in my baking dish.  Now stay with me on the next step...

See the ugly brown bits in the pan that you browned the chicken in?  Pour the barbeque sauce right in there!  And scrape all the bits off the pan into the sauce.  Flavor, flavor, flavor!!

Then I took the bottle and added about a half cup or so of water, rinsed it around, and poured that in the pan, too.  No bbq sauce left behind!

After the sauce is heated, pour over the chicken, cover with foil, and bake at 350 for about 20-30 minutes.  After that, remove foil, baste chicken with sauce, and continue baking for 5-10 minutes or until chicken is cooked through and no longer pink.

This was so easy and yummy!!  The whole family enjoyed it - a new family favorite!
