Super Easy Italian Chicken

I don't know when I started making this chicken a long time ago.  It's so easy, but full of flavor thanks to the Italian dressing.  Easy, peasy, all you need is:
  • chicken tenderloins
  • bottle of Italian dressing


I didn't have the large ziploc bags on hand, so I had to use 3 small bags to marinate my pound and a half of chicken.  I used enough Italian dressing to coat the chicken in each bag.  When I remember, I marinate the chicken overnight, but on this day, I just marinated it for a few hours in the refrigerator.  I think longer is better, but if you don't have a chance to make it overnight, it's still good after a few hours.

I put it on a cookie sheet sprayed with my olive oil cooking spray and squirted more dressing on each piece.  Yep, straight from the bottle.  Because I still don't have a basting brush located.  I really need to do that, don't I??  It would feel so much more professional if I had done this with a basting brush, but squirting works just fine in a pinch :)

Bake chicken in 350 degree oven.  I baked mine for 8 minutes, turned over all the chicken, basted each piece with more dressing, and returned it to the oven for 10 more minutes.  I don't think that's absolutely  necessary, but I wanted to add as much flavor as possible.  Since I was using tenders, this was plenty of time for the chicken to cook through.  It will not brown, you just need to make sure it's cooked all the way through without any pink.

I believe this is what you call a yellow meal - like I've said before, this isn't a gourmet cooking blog, but a real life cooking blog, so here is our reality!  We didn't have made from scratch biscuits on this night, but bread did the trick.  This chicken is so easy and versatile, I'm thinking next time I might cut it up and add it to pasta or something like that.  Any ideas??
